Ground Egunsi

Egunsi is a West African name for the seeds of the melon fruit.  When the seeds are dried, shelled and ground, it becomes a staple ingredient in many West African dishes.  In Nigerian culture, egunsi is popular with pounded yam. These seeds are rich in fat and protein.
